OCT Series Crêpe Pan

Regular price $373.00

The Soy OCT Class pans are the best possible crêpe pans in the World, as we know it. Their solid 2.5mm copper mass and silver lining are perfect heat conductors that will give you an ultimate control on your crêpe making.

It also makes perfect omelettes, mücvers and other kinds of 'ajjehs.

The ideal balance of the pan makes it very easy to flip anything, for the accustomed.

Their 999 carat Silver Lining makes them able to withstand very high temperatures with ease, unlike their Western-European counterparts, that delaminate (and are lost forever) after roughly 290°C.

Without forgetting to mention, as the OCT are quasi-flat, you'll make a mean steak, as if it was on an actual Silver Plancha (or Teppanyaki / Griddle, you name it!).

They are as good for the professional as well as the enthusiast.

All work is entirely done by hand and hammer cold-forging. No press or even spinning is involved.

The current Soy Handles are of our own patented alloy of Sand-Cast Solid Bronze, painstakingly filed by hand by our artisans that come from Jeweler backgrounds, and will basically last a lifetime.

They are mounted on the main body with 5 or 8 rivets each made of Solid White Copper and are extremely sturdy, yet easily removable by us if maintenance is needed.

The alloy of bronze we use (the Soyactite) is developed in-house in 2012, and is highly unlike our Western-European counterparts, who mostly use a very conductive alloy of brass or aluminum bronze, ours remains a very hard and refractory alloy, that has 5 x the performance of cast iron.

Also owing to its patented trident design, the handle heats up pretty slowly, even slower than cast-iron equipped French or Belgian pans. Under industrial fire, it takes 5 to 6 times to heat up until uncomfortably hot when compared side by side with a French competitor product of the same bulk.

Beautiful craftsmanship

Our new crepe pan is gorgeous and makes a great omelette. The temperature is so even. I haven't had a chance to make crepes with the pan yet, but I know they will be great.

Beautiful results

I upgraded to this crepe pan from a thick anodized aluminum one. At first I was concerned as there is a learning curve: I had seasoned properly with coconut oil (may go with flax seed oil next time), but I was having issues with my omelette sticking to the pan. After a few tries I worked out that I needed a different temperature on my gas range, preheating time, and determined the right amount of oil and butter. The pan also got seasoned a bit more from use and I've learned that a good jolt every once in a while will keep the omelette loose and sliding on the pan (I serve not by folding in the pan, but rather by simply sliding the omelette onto a plate and moving the pan forward after it's half way off so it's folded on top of itself). This pan is a joy to cook with.
