DT – Dizi / Piti / Bozbaş Pot
Dear Soy family, Soy DT class Dizi pot from Soy Local Cooking Utensils.
This dish, also called Dîzî, Âbgüşt and Piti, cooked in Iran, the Republic of Azerbaijan, the eastern regions of Armenia and Turkey, involves special cooking, serving and eating rituals.
The array containers filled with lamb meat, tail fat, chickpeas and spices are arranged in seemingly endless rows on a special charcoal barbecue and left to boil on embers overnight.
The next day, it is usually served to each person with a bowl of their own special Dizipot and a meat mallet along with some flatbread and greens for a hearty breakfast.
First, the flatbread is chopped into a bowl, then it is covered with the food's water, this is the first step.
In the second step, people need to use a meat mallet and lightly beat the meat and chickpeas to turn them into a homogeneous puree, which is then spread on the flatbread again and eaten.
At Soy, we produce 3 sizes of Dizi pots with diameters of 9, 10 and 11 cm, the classics are DT9 and DT10, while DT11 is reserved for double serving. We highly recommend ordering them in batches of the same size (i.e. 4x DT10) as each one is used for an individual serving.
Each DT pot comes with the hand-bent extra-hard Turkish boxwood meat mallet you'll need for the second stage of your meal.
